Processing and Packaging
We are currently using Lemay and Sons in Goffstown, New Hampshire, for our beef processing. Can't beat local production and local services!!! Check them out at www.lemayandsonsbeef-bbq.com.
The beef is aged by hanging for two weeks. It is processed into individual cuts, flash frozen and vacuum packaged. A label is placed on each package with the weight and a USDA Inspection stamp. We sell the beef by the whole, side, or split side for $6.80 per pound hanging weight. A split side (as opposed to a quarter) means that instead of getting a rear quarter or a front quarter, you receive half of a side, meaning a mixture of steaks, roasts and ground beef.
See here for a very useful brochure explaining what hanging weight means from the Oklahoma Department of Agriculture, Food and Forestry: http://www.oda.state.ok.us/food/fs-cowweight.pdf. The information you can find from the States' Cooperative Extensions and their Agriculture Departments is outstanding.
You'll find our price list and some links to recipes and cooking tips on the next page. Availability varies with the season so be sure to email with questions: [email protected].
We have limited options for you to purchase live animals. You will then be responsible for all processing fees and for delivery of the animal to the butchers and picking up the beef after processing. Please contact us for availability of this option.
