One of my favorite easy pot roast recipes is as follows: place beef roast (doesn't matter what kind or size) in crock pot. Cover with a sliced raw onion and one can of cream of mushroom soup (just as it comes, not diluted with anything). Leave on low all day. Served with mashed potatoes or biscuits and a veggie this is a super easy fall and winter recipe. The soup and juices from the onion and beef combine to make the best gravy!!
Don't be afraid to use stew meat for chili. The meat is so fresh and tender that with just a little trimming you can use it in your favorite recipe with no worries.
Thawing out your frozen beef properly is very important. The first beef we did... we were so excited to try it that we microwaved a package of burger to eat that night. Boy, what a big mistake. The microwave cooks it while defrosting so it was tough as could be when we made the burgers. Turns out you should defrost all beef in the refrigerator, although I have successfully sped up the process by putting it in a sink of cold water for a while.
Here, however, is a microwave thawing method from the Beef Checkoff folks. I haven't tried it. Let me know if it works!!
